This sandwich can be lunch, a snack, or a late-night thing. Eat it with potato chips and lemonade; it's also great with a simple green salad for dinner.

Ingredients

  • 12 ounces Gruyère, Swiss cheese, or sharp cheddar, sliced, divided
  • 6 dill pickles, sliced crosswise ¼ inch thick
  • 6 ounces thinly sliced salami, such as Genoa
  • 6 tablespoons unsalted butter, room temperature

Recipe Preparation

  • Divide half of cheese among 4 slices of bread. Top with pickles, salami, and remaining cheese. Close sandwiches and spread half of butter evenly over top of bread slices.

  • Heat a large skillet, preferably cast iron, over medium-low heat. Place sandwiches, buttered side down, in skillet. Spread remaining butter over top of bread. Cook, pressing down with a spatula to encourage melting and turning once, until cheese is melted and bread is golden brown and crisp, 5–7 minutes.

If you&rsquove been following along Girl Heart Food for a little while, you know my love for cheese runs deep.

Heck, as a kid, I even remember coming home from school, throwing cheddar on a plate, melting it in the microwave and digging in. The love is real.

So, any excuse to pile cheese onto something, I&rsquom in!

Just recently, hubby and I visited our local farmer&rsquos market.

Aside from veggies for sale, local vendors are selling all sorts of food, one of which is grilled cheese sandwiches.

Hubby and I ordered a couple and shared, one was a pickle grilled cheese sandwich.

We took it home and devoured. Both of us agreed that the dill pickle sandwich was our fave.

And since I&rsquom no stranger to grilled cheese sandwiches, you know I had to make my own!

If you&rsquore a pickle fan and a grilled cheese sandwich fan, then this bad boy is for you!

Serve with a big bowl of homemade tomato soup or a stack of potato chips and you&rsquore set for one comforting meal!

How to make a pickles grilled cheese sandwich

Wet pickles don’t really mix well with cheese and bread, so take out a couple of pickle slices or pickle chips and place them on a paper towel to soak up the excess liquid. It won’t take long, just the amount of time it takes you to set up the rest of your sandwich will do.

Put half of your cheese on one slice of bread. With this grilled cheese sandwich, I don’t think it makes a huge difference whether you use shredded or sliced cheddar.

Remove the pickles from the paper towel and chop them into small pieces. They don’t need to be tiny, but an inch or two wide should be fine. Pickle chips might not be a big deal to leave whole, but especially if you’re using sandwich sliced pickles, you’ll want smaller pieces to leave space for the cheese to melt around the pieces of pickles.

Spread your pickles onto the cheese. Then cover with the other half of your cheese and close up the sandwich.

Melt a slab of butter in a pan at medium. Once the butter has completely melted and starts forming little bubbles, your pan is hot enough. Put your grilled cheese sandwich into the pan and cook for 3-4 minutes on each side.

Sometimes 3-4 minutes isn’t quite enough time for each side to grill completely to a perfect golden brown. If you’ve flipped your sandwich and you’re not quite satisfied with how the first side looks, cook each side for an additional minute or two. Better to flip several times than to have a burned grilled cheese sandwich!

Variations

Spice up your pickles grilled cheese sandwich with a little of your favorite hot sauce. Or add a few slices of tomato. Another great variation is to add a slice or two of salami.

Pickles are more versatile than you might have thought, and there are lots of things you can add to this sandwich to make it your own!

Warm salami, ooey, gooey cheeses, and sauce sit sandwiched in between toasted or grilled artisan bread. These Hot Salami & Cheese Sandwiches are a delicious cafe quality, gourmet sandwich you can easily replicate at home.

These are the BEST meat and cheese sandwiches I have made in a while. They tasted like something I would pay a ton for at a specialty cafe. The special sauce addition makes them!

In case you all didn’t know–cheese is my favorite food. I love it hot, cold, hard, and soft. In fact there are very few varieties I don’t care for. Today, I am sharing one of my FAVORITE summer lunch recipes.

Say hello to these Hot Salami & Cheese Sandwiches. Made with fresh kalamata olive bread, dijon mustard, dry salami, and cheese..lots of tasty, ooey, gooey cheese.

For this recipe, I used my favorite block cheese which happens to be Heluva Good! Cheese. This quality brand of cheese (found at Walmart) really makes these deli-style sandwiches hard to resist because the cheese actually melts nicely when heated.

With my three kids home for the summer, I have been pretty creative with lunches. The same old PB&J does get old after awhile. That is why I have been mixing things up.

My kids LOVE salami & cheese cold sandwiches so I wanted to try them toasted. I knew this would make the Heluva Good! Cheeses really melty and delicious. Since they are such mouth-watering and versatile cheeses, I knew they would pair perfectly with the salami.

Check out how yummy these Hot Salami & Cheese Sandwiches look–All that hot, melty cheese really kicked them up a notch. While pretty much any variety of Heluva Good! Cheese would have worked, the Sharp Cheddar, Jalepeno Jack, and Extra Sharp Cheeses were perfect. Available at Walmart for under $3, these are a steal for such a quality chunk of cheese!

My three kids loved them, and they took maybe ten minutes out of my busy day.

The dijon mustard spread really helped to send these sandwiches into overdrive.

I loved the tangy and sweet taste and thought it complemented the meat and cheese perfectly.


Serving Up A Winning Dill Pickle Grilled Cheese

Hot take: Sandwiches should be cut in half. even if it’s only for you.

Some sandwich enthusiasts believe if you can’t wrangle your sandwich as is, you shouldn’t be eating it. Hogwash! Sandwiches are intended for pure unbridled joy, and if you’re not having fun eating it, then it’s going to take away from all the delicious flavor.

Whether you prefer to go diagonal, vertical, or even horizontal, cutting a sandwich ensures that you can easily pick up and bite into your crispy culinary creation.

Smoked Snack Sticks Recipe

This is my smoked snack sticks recipe! You can make these snack sticks on a dehydrator, but this Camp Chef Woodwind pellet grill adds amazing flavor to these jerky sticks! These are better than Slim Jims.

I start off with 7 lbs of ground beef and then mix together my jerky seasoning and brown sugar. Blend the seasonings in with the meat well. Then I use the LEM Jerky Cannon to squirt these sticks onto the LEM Jerky Racks. I then put them on the smoker on the low smoke setting. That setting gives me a lot of smoke at a low temperature. It fluctuates between 150-160 degrees. I left these on for 7 hours, rotating the racks ever 2 hours. Let these cool a bit and eat away!

Making Salami in a House Fridge - Is it even worth it?

- 1Lb (450gr) of organic chicken breast
- 100 ml cold water
- 1 tsp of salt
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp black pepper
- 1 tsp of sugar

Let it simmer for 2 hours at 80 ° C / 175 ° F

That measuring cup or bowl doesn't have to be cold. In fact, it's almost certainly better if it is not.

So shred around a cup of cheddar
Chop up some salami
Chop up a dill pickle
Add a teaspoon of dijon
Add a squirt of hot sauce
Fangjangle it
Don’t worry about the ratios too much even though the ones I described are perfect
If you like a thinner sandwich, you might want to shred around 1.5 cups of cheese and make two
If you like a thicker sandwich, make something else because melted cheese usually has to obey the laws of physics
Butter one side of each slice of bread, hock in that cheese mixture, then cook it low and slow until it’s golden brown and melted.
If anyone tries to tell you it’s a melt and not a grilled cheese, never speak to them again.

Betty's Salami Rollups

Betty demonstrates how to make Salami Rollups. These are rounds of salami, spread with a homemade dressing, and rolled up to make a tasty and attractive appetizer.

3 ounces cream cheese, softened
1 ounce (1/8 cup) sweet pickle relish
½ pound thinly-sliced salami

In a small bowl, stir pickle relish into cream cheese until blended. Place ½ teaspoon mixture onto each slice of salami and roll up. Secure the rolled salami with a toothpick. Arrange on a nice serving plate. Cover with plastic wrap and refrigerate until serving time. Enjoy! --Betty :)

Super Ham and Cheese
3 tablespoons cream cheese
2 tablespoons chopped dill pickle
1 slice ham
1 tablespoon mustard
1 thick slice Swiss cheese

Greek-style
3 tablespoons cream cheese
2 tablespoons sliced stuffed green olives
4 ounces canned, drained tuna
2 slices tomato
1 thick slice feta cheese

California-style
3 tablespoons cream cheese
2 tablespoons chopped dried apricots or tomatoes
1 slice smoked turkey or ham
2 tablespoons sliced mushrooms
1 thick slice oka cheese

Deluxe
3 tablespoons cream cheese
2 tablespoons diced red or green bell pepper
2 slices salami
2 tablespoons tomato sauce
1 thick slice mozzarella cheese


How to make Easy Salami Appetizers:

Here’s how it works: a piece of salami, a smudge of cream cheese and a piece of pepperoncini (they’re found in a jar near the pickles).

Fold ’em up, fasten with a toothpick, and that’s it– just pile them onto a platter. For a big party, I like to buy the salami in bulk at Costco, and you can pick up a big tub of spreadable cream cheese there too. As far as the pepperoncini go, I cut out the seeds and just put a little piece of seedless pepperoncini on top. If you’re not familiar with pepperoncini, they’re not overly spicy like jalapeno. They are just spicy enough to add some interest and flavor to the appetizer.

It’s easy to eat a lot of these in a short amount of time, so they’ll be a popular choice for munching at your party. In other words, make a lot of them!
